I always double this recipe because it calls for half an onion and half a head of cabbage and I don’t wanna deal with the other halves. The result is a very large pot of really delicious, vegan friendly, savory, healthy soup and all for less than $4. It probably breaks down to about .35-.50 cents per serving depending on your serving size.
Parmesan cheese is optional and I will grate a little over the top if I have it on hand so I’m not adding it to the budget. This website is a great resource for a really diverse set of Vegetarian recipes and inexpensive healthy meals. Check it out!

Baked pancake with peaches
Recipe here. My peaches were a bit tart so I put them, the lemon juice and the sugar in some warm butter, brown sugar and cinnamon just for kicks. YUM. Next time I may bake a little cinnamon into the pancake as well.
Definitely an improvement but so much work!

My son tricked out my aging G5 today. I’ve got a new terabyte drive and now triple the RAM. I almost wish I had some freelance work to do so I could test it out buuuuut since I don’t I think I’ll go start on the second book of Game of Thrones.
PS - Tonight’s result on SYTYCD was BULLSHIT!!!! Miranda was easily one of my favorites. :(

Vegan Friendly Creamy Avocado Pasta
The easiest pasta sauce I’ve ever made and damn tasty. I don’t have a “real” food processor, just a little hand crank one so my sauce was a little bit chunkier than the original, but I can’t imagine the taste differs much. I also used linguine instead of spelt and left the fresh basil out. Overall: tasty, inexpensive, and easy which makes it a 5 star recipe in my book.
(I’m just going to take it upon myself to taste-test every recipe boyfriendreplacement posts. I’m waaaay behind).
Hasselback Potatoes at Casa d’Me tonight. These have been taunting me from my tumblr dashboard for months and I finally broke down and made them. They were baked with garlic and sea salt and then topped with sharp cheddar and sour cream. A little salsa would have been great too but I’m out. Still quite yummy.
So, the low carb thing must wait one more day as I’d lose my Alabama passport if I failed to cook black eyed peas on New Years Day. Of course, the tradition is Hoppin’ John with cornbread but I cut out the rice and pork and replaced them with a nice sofrito base for the peas and I’m out of corn meal so I made biscuits instead. The addition of iced tea and homemade grape jam and it was a pretty tasty and traditional way to start off 2011. My grandmother would be proud.
