I ate a very restricted low carb diet for several years and almost completely gave up potatoes, bread, croutons on salad, processed sugars, etc. It was very difficult for the first several weeks and then just became so normal that I didn’t think too much about it. But if I cheated and ate potatoes or pasta I’d have to go through that withdrawal period all over again. The diet actually worked really well for me. I slept better, I was more active and alert, and generally felt more energetic and “together”. Then I spent a summer in Italy and special diet went right out the window. That was 2007 and it’s been a downward slide into carb overload ever since. It’s so difficult to get back into that headspace when you’re tired all the time like I am, even though I know I’ll be less tired if I go back to that restricted diet. I’ve tried several times and it just hasn’t taken.
Anyway, I guess I’m just saying be strong and good luck! It’s worth it if you can get on the other side of the cravings.
